Today’s Recipe: Almond-Apricot Cereal Squares

No time for a sit-down breakfast? Fuel up on the go with this unique, fruity take on a cereal bar. Make a big batch, wrap bars individually and store them in the fridge, and you’ll have quick and wholesome eats on hand all week long!

Makes 16 squares


4 cups Kellogg’s® Special K® cereal

1/2 cup dried apricots, chopped

1/2 cup agave nectar

1/4 cup sugar

1/2 cup almond butter

Pinch salt


  1. Line an 8-by-8-inch baking pan with heavy-duty aluminum foil and lightly spray with nonstick cooking spray.
  2. In a large bowl, combine cereal and apricots.
  3. In a heavy saucepan, combine agave nectar, sugar and almond butter; bring to a boil over medium heat, stirring constantly. Pour over cereal and gently stir to coat.
  4. Scrape into prepared pan and spread into an even layer. With a spoon, press down to compact mixture. Refrigerate until firm, about 30 minutes. Let cool and cut into squares.
